Ingredients:
1 1/2 cups ground beef
3 large Eggplants ( broil in the oven)
1 small onion ( minced)
1 small carrot ( minced)
2 eggs ( well beaten)
2-3 tablespoon flour
garlic
dash of salt
1 teaspoon pepper
2-3 tablespoon Vegetable Oil
soy sauce
Preparation
1. Broil the eggplant until cook then remove from the oven and peel the skin. Set aside in the plate and slice 3 times and mashed with fork.
2. In the pan, sautee garlic, onion until brown and add ground beef and then add carrots. Stir altogether and when the carrot is cook. Add a dash of salt and pepper and a little bit of soy sauce and stir then put aside.
3. Big bowl. beat the eggs and add eggplants, ground beef with carrot, onion and garlic, flour. Mixed well and add extra a dash of salt if needed.
4. In the pan, cook 3-4 tablespoon meat and turn both side for about 2-4 minutes or when you know is brown. Served with white rice.
